Sweet Potato Pancakes

Recipe courtesy of Chef Michael Couso at Richie Cecere's in Montclair, NJ. Chef suggests pairing this vegetable with Grilled Pork Chop with Apple Bacon Demi Glaze.

Yield: 4 servings

1 large Sweet Potato (Grated)

1 medium Idaho Potato (Grated)

1 small onion (finely grated)

1 large egg

Pinch of salt and white pepper

Pinch of ground nutmeg

1 Tbsp.  all purpose flour

1 Tbsp corn starch

¼ Cup vegetable oil

 Method:

In a large mixing bowl, combine both grated potatoes.  Add onion and egg and stir with wooden spoon until blended.  Season with salt, pepper and nutmeg.  Sprinkle with flour and corn starch.  Mix well.

In a sauté pan heat vegetable oil over medium heat.   Spoon approximately 2 tablespoons of potato mixture into pan and allow to brown, 1-2 minutes per side.

Remove from pan and place on greased cookie sheet.  Bake at 450 degrees for 5 minutes.

Serve with apple sauce or sour cream.
